Ginger Simple Syrup

Easy to make, ginger simple syrup is a great addition for cocktails. It is also delicious over ice cream and makes a great sweetener for tea.

  • 3/4 cup peeled and thinly sliced ginger root (about 1/4 pound))
  • 1 cup sugar
  • 1 cup water

Bring ginger, sugar, and water to a simmer over medium-low heat, stirring until sugar has dissolved, then gently simmer, uncovered, 30 minutes. Strain through a fine sieve into a bottle and cool to room temperature, then refrigerate. Syrup will keep in refrigerator for up to 30 days.

Remaining ginger slices can be used in other recipes, such as candied ginger.
